Power Up Your Morning with Protein-Packed Blueberry Vanilla Pancakes

I love pancakes — they are one of my favorite breakfast comfort foods — but don’t love how I feel after. Traditional pancakes can leave you feeling sluggish thanks to all the carbohydrates and sugar.

This recipe for Blueberry Vanilla Protein Pancakes lets you enjoy your pancake cravings guilt-free. Packed with protein, fiber and whole grains, it’s a delicious way to start your day feeling energized, balanced and ready to take on whatever life brings!

Adding blueberries as a topping takes these pancakes to the next level. They’re loaded with antioxidants to help fight inflammation and extra fiber to support gut health, and add a pop of flavor and color to every bite.

Ingredients

  • 2 cups oats (dried)
  • 1 cup vanilla protein powder (or 4 scoops)
  • 2 bananas
  • 1 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 cup almond butter
  • 1/2 teaspoon cinnamon
  • 1 ounce avocado oil spray (as needed for cooking)
  • 1 cup frozen blueberries

Directions

  1. Blend all ingredients (except blueberries) in a food processor.
  2. Heat griddle or pan over medium-high heat and spray with avocado oil.
  3. Spoon one-quarter of the batter onto the griddle and cook for three to five minutes until golden brown and slightly crisp.
  4. Flip and cook on the other side for an additional two to three minutes until golden brown.
  5. Repeat with the remaining batter.
  6. While the pancakes are cooking, heat the frozen blueberries in a small saucepan.
  7. Add warm blueberries on top of the pancakes and enjoy!
